The Kawarau Bungy Centre is the home of commercial bungy jumping, and the bridge there drops you towards the river below. I stood on the ledge for what felt like a long moment and then went, and the freefall is over so fast you spend the rest of the day replaying it. The operators are professional and the setting is spectacular, with the bridge strung across a narrow gorge. If you are going to bungy anywhere in the world, this is the historic spot. Book in advance, because slots in the morning fill up, and bring a friend to film the jump from the sideline.

Throw Yourself Out of a Plane

Skydiving over Queenstown is the most famous tandem jump in New Zealand, and the scenery is the whole point. You climb, jump, and fall with the Remarkables peaks and the lakes spread out below you in every direction. For a middle ground between the tame and the extreme, white water rafting on the Shotover or the nearby Dart River gives you grade three and four rapids with a guide steering the tricky parts.
